5-6 Roma tomatoes, sliced
1 can of butter beans, drained
1 can of Cannelinni beans, drained
1 orange bell pepper, sliced
1 whole head of garlic, covered in olive oil and wrapped in foil
1 whole yellow onion, quartered
Olive oil
Garlic powder
Onion powder
Salt
Pepper
Trader Joe's Soffrito seasoning
Combine all ingredients on a large sheet pan and roast for 45 minutes at 400 degrees. Blend roasted ingredients, then add one tablespoon of balsamic vinegar and vegetable broth or heavy cream to achieve desired consistency. Serve with a balsamic drizzle.
