Frango Assado com Batatas | Rosa’s Portuguese Kitchen S02E30

É um prato simples, reconfortante e perfeito para partilhar com a família e amigos num almoço de domingo memorável.

Modo de Preparação
  1. Pré-aqueça o forno a 200°C.
  2. Numa taça, misture o alho, o azeite, a manteiga derretida, o sumo de limão, o vinho branco, o colorau, a massa de pimentão, o sal e a pimenta-preta.
  3. Esfregue bem a marinada por todas as pernas de frango, para ficarem bem temperadas.
  4. Dica: Se tiver tempo, cubra o frango e deixe-o marinar no frigorífico durante 1 a 2 horas para ganhar ainda mais sabor.
  5. Descasque as batatas ou lave-as muito bem, caso prefira assá-las com casca.
  6. Coloque as batatas numa taça com a cebola. Junte o azeite, o colorau, o sal e a pimenta-preta e envolva muito bem.
  7. Coloque o frango no centro de um tabuleiro e distribua as batatas e a cebola à volta.
  8. Junte os ramos de alecrim por cima do frango e das batatas.
  9. Leve ao forno durante cerca de 1 hora, regando o frango com os próprios sucos a cada 20 a 30 minutos para mantê-lo suculento.
  10. Nos últimos 20 minutos, aumente a temperatura para 210°C para deixar a pele bem dourada e estaladiça.
  11. Sirva o frango assado com as batatas, a cebola e uma salada verde fresca.

It is simple, full of flavor, and perfect for bringing the warmth of authentic Portuguese cuisine to a family meal.

Step by Step
  1. Preheat the oven to 200°C.
  2. In a bowl, combine the garlic, olive oil, melted butter, lemon juice, white wine, sweet paprika, pimento paste, salt, and black pepper.
  3. Rub the marinade all over the chicken legs, making sure they are well coated.
  4. Tip: If you have time, cover the chicken and marinate it in the fridge for 1 to 2 hours for even more flavor.
  5. Peel the potatoes, or wash them well if you are leaving the skins on.
  6. Place the potatoes in a bowl with the onion. Add the olive oil, sweet paprika, salt, and black pepper, then toss well.
  7. Place the chicken in the centre of a roasting tray and arrange the potatoes and onion around it.
  8. Add the rosemary sprigs over the chicken and potatoes.
  9. Roast for about 1 hour, basting the chicken with the pan juices every 20 to 30 minutes to keep it moist.
  10. During the last 20 minutes, increase the oven temperature to 210°C so the skin becomes crisp and deeply golden.
  11. Serve the roast chicken with the potatoes, onion, and a fresh green salad.
